
Mexican Pozole

FOR THE SOUP:
- 250 g corn kernels
- 250 g pork loin
- 250 g chicken breast
- 2 liters of water
- 1 clove of garlic
- 1 onion
- 3 peppers
- 2 tbsp. oil soup
- salt
FOR GARNISH :
- 1 lettuce
- 20 radishes
- 2 red onions
- 4 untreated lemons
- dried oregano
Prepare the soup:
- In a large pot, boil the corn kernels in water until they pop.
- Cut the pork loin and the chicken breast into pieces. Peel and chop the onion and garlic.
- Add them to the pan, salt, then simmer for 40 minutes or until the meats are cooked through.
- Meanwhile, bring water to a boil in a second saucepan. Add the peppers and let them cook for 10 minutes.
- Then drain them, then remove the seeds and the skin.
- Grind them in a blender with 2 tablespoons of hot water.
- Heat the oil in a skillet. Fry the peppers for about 5 minutes or until golden brown.
- Then add them to the soup and simmer for 10 minutes over low heat.
Meanwhile, prepare the garnish :
- Wash and dry the lettuce, then roughly chop it.
- Peel the red onions and cut them into thin slices.
- Clean and pat the radishes. Cut them into thin slices.
- Cut the lemons into quarters. Remove seeds if needed.
- When the soup is done cooking, pour it into bowls or soup plates. Adjust the seasoning with salt and pepper if necessary.
- Savor the hot soup accompanied by the garnish placed in separate containers.
