Mini skewers of duck breast with apricots

- 24 slices Smoked duck breasts
- 12 Vitelotte potatoes
- 12 shallots
- 1 garlic clove
- 24 soft dried apricots
- 2 tbsp. liquid honey
- 1 sprig of rosemary
- 1 bay leaf
- 3 tbsp. tablespoons olive oil
- 5 spices
- flower of salt
- Ground pepper
- Marinate the slices of duck breast in honey with 3 pinches of 5-spices.
- In a cast iron casserole, heat the oil with the garlic and cook the unpeeled potatoes with the shallots in their jackets, the bay leaf, the rosemary, salt and pepper, 15 to 20 min.
- Wrap each slice of duck breast around 1/2 a peeled shallot.
- Form the skewers with 1 stuffed duck breast, 2 potato slices and 1 apricot. Spend a few minutes under the broiler.
- Serve immediately on a bed of young shoots or fresh sprouted seeds.
