
Mirabelle plums with small mousse
Ingredients

- 600 g Mirabelle plums
- 1 Orange untreated
- 4 Petits-suisses
- 10 cl Semi-skimmed milk
- 1 egg white
- 1 tbsp. tbsp icing sugar
- 20 g Cornflakes without sugar
- 1 sheet of gelatin
- 1 small cinnamon stick
- Rinse the Mirabelle plums, remove the pits. Finely grate the zest of the orange, then squeeze it.
- For the juice into a sauté pan, add the grated zest and cinnamon.
- When the liquid simmers, add the Mirabelle plums. Poach them for 10 minutes.
- Let them cool in their cooking juices then divide them into cups and set aside in the fridge.
- Soften the gelatin in cold water, squeeze it out. Melt it in hot milk.
- Whisk the petit-suisses with the milk. Beat the egg white until stiff, add the icing sugar, whisking constantly.
- Add this meringue to the petit-suisses. Book cool.
- To serve, cover the Mirabelle plums with the mousse then sprinkle with cornflakes.
