Papillotes of whiting with avocado

- 4 large whiting fillets
- 2 Avocados not too ripe
- 1 Lemon
- 1 Tomato
- 2 tbsp. tablespoons chopped cilantro
- Pepper
- Preheat the oven to 240°C. Peel the avocados, remove the pits, mash the flesh with a fork. Cut the tomato into cubes, remove the seeds. Add them to the mashed avocado as well as the lemon juice and pepper.
- Spread the preparation on one side of each fish fillet, overlap them in pairs and place each pair on a rectangle of parchment paper. Close the foil and cook for around 15 minutes.
- Sprinkle with chopped coriander by opening the papillotes.
