Pear apple compote

- 1 kg Apples of 3 different varieties
- 1 Comice pear
- 0.5 Lemon
- 1 vanilla pod
- 2 sprigs of lemon verbena
- 2 star anise
- Peel, core and roughly dice the apples and pear.
- Mix in a saucepan and sprinkle with lemon juice.
- Split the vanilla pod in half and scrape the inside to extract the seeds. Add them to fruit.
- Add the lemon verbena and cook for about 30 minutes; the fruits must be tender.
- Leave to cool and refrigerate until ready to serve.
