
Pilaf of sweet potato, leek and quinoa

- 1 sweet potato
- 1 leek
- 2 garlic cloves
- 250 g red quinola
- 1 tsp. Garam Massala powder powder
- 1 tsp. chilled chili
- 3 tbsp. olive oil coffee
- 1 tsp. grated ginger
- 1 bouquet of coriander
- 1 lemon
- 750 ml of vegetable or chicken broth
- sour cream
- salt
- Peel the sweet potato and cut it into slices of about 1.5 cm.
- For the olive oil into a pan.
- Fry the sweet potato 15 min and stir regularly until it is golden.
- Slice the garlic and fry it in a pan for a few minutes, adding a little oil. Add the quinoa and mix.
- Add the chopped leek, the Garam Massala, the ginger, the chili and then the broth.
- Simmer 20 min until the whole liquid is absorbed and the quinoa is cooked. Add a little water if necessary.
- For lemon and coriander sauce, press the lemon and mix it with half the coriander bouquet.
- When the quinoa is cooked, add the rest of the coriander and mix well. Salt.
- Serve with lime sauce and sour cream.
