- 1 cup shredded mozzarella
- 3 green onions, thinly sliced
- 12 slices of Hungarian salami, cut into 1 cm pieces
- 1/2 cup pitted mixed marinated olives, halved, plus extra for serving
- 1/2 cup semi-dried tomato strips, chopped
- 1/4 cup finely chopped fresh flat-leaf parsley leaves
- 1/4 cup finely chopped fresh basil leaves, plus extra leaves for serving
- 4 eggs, lightly beaten
- 1/4 cup light flavored extra virgin olive oil
- 1/2 cup of milk
- Preheat the oven to 180C/160C convection heat. Grease a loaf pan 7 cm deep and 9.5 cm x 19.5 cm. Line the bottom and sides with parchment paper, extending the paper 2cm above the pan on all sides.
- Place the flour in a large bowl. Add mozzarella, onion, salami, olives, tomato, parsley and basil. Season. Stir until well blended.
- Make a well in the center of the flour mixture. Add egg, oil and milk. Stir until just combined. For into prepared pan. Bake for 55 minutes to 1 hour or until a knife inserted in the center comes out clean. Let rest in pan for 10 minutes. Transfer to a wire rack to cool. Slice. Serve with basil leaves and additional olives.
