Pizza roll with figs, goat cheese and rosemary

- 500 g Wholemeal spelled flour (T110)
- 25 cl lukewarm water (or 250 g)
- 50 g olive oil
- 0.5 cube of fresh baker's yeast
- 8 g Salt (about 2 level teaspoons)
- 200 g fresh goat cheese
- 2 semi-dry goat cheese
- 4 to 6 ripe figs
- 1 small red onion
- 1 to 2 tbsp. tablespoons acacia honey (or any other liquid honey)
- 1 handful unsalted green pistachios (and crushed)
- 1 pinch Salt
- Ground pepper
- 4 to 5 sprigs of fresh rosemary
- Dissolve the yeast in lukewarm water and let stand for 5 minutes. In a salad bowl or in the bowl of your robot, mix the flour with the salt. Make a well and add the dissolved yeast. Knead until you get a smooth mixture. Cover and let stand 30 minutes at room temperature. The dough will soften and gain elasticity.
- Take the dough again then, while mixing, for in the oil. Then knead just long enough (more or less 10-15 minutes) to obtain a homogeneous, smooth and supple ball of dough. Cover and let rise for at least 2 hours at room temperature.
- Meanwhile, prepare the garnish. Chop the onion. Slice the droppings and figs into thin strips, then set aside.
- At the end of the rise, take the dough which has doubled in volume and gently degas it with your fist. Then transfer it to a floured work surface and divide it into two pieces. Shape them into balls, cover and let rest for 15 minutes. Using a rolling pin, then roll them out into a rectangle or a rough oval about 15 x 25 cm and place them as they are made on a sheet of baking paper.
- On each of the pastry bases, spread the fresh goat's cheese fairly and evenly, salt and pepper if necessary, then spread the onions, the manure strips and the figs on top. Drizzle with honey and sprinkle with pistachio chips and rosemary leaves. Fold the lower and upper edges then, starting from the left edge, roll the pizza on itself to form a large sausage.
- Using a sharp knife or pizza cutter, make deep side cuts. Using a pastry brush, brush the tops of the pizzas with warm water and sprinkle with the rosemary leaves. Cover and let rise for 1 hour at room temperature.
- Fifteen minutes before the end of the resting time, preheat the oven to 210°C (th. 7) with a tray placed on a wire rack. Then bake the pizzas, with the baking paper, placing them on the hot plate. Bake for about 20 minutes or until the pastry is lightly browned and the cheese is melted. Remove from the oven, serve immediately.
