Plowman’s Lunch with Seed Soda Bread

- 2/3 cup plain flour, plus extra for dusting
- 1/2 cup wholemeal flour
- 1/2 cup traditional rolled oats
- 1 tablespoon brown sugar
- 1/2 teaspoon of salt
- 1/2 teaspoon baking soda
- 2 tsp flax seeds
- 1 teaspoon caraway seeds
- 2 tablespoons raisins
- 200 g jar of plain yoghurt
- 200 g sliced ham
- 100 g sliced cheddar
- 4 pickles
- 4 pickled onions
- 50 g mixed salad leaves
- 1/3 cup sweet mustard pickles
- Preheat the oven to 220C/200C convection heat. Line a baking sheet with baking paper.
- Combine flours, oats, sugar, salt, baking soda, seeds and raisins in a large bowl. Add the yogurt. Mix to form a soft dough. Transfer the dough to a floured surface. Knead until smooth.
- Shape the dough into a ball. Place on a prepared baking sheet. Flatten to form a round of 14 cm. Make a deep cross on top of the bread. Bake for 25 to 30 minutes or until golden brown and bread sounds hollow when tapped. Let stand 15 minutes to cool slightly (see notes).
- Arrange the ham, cheddar, pickles, onions and salad on a serving platter. Serve with bread and pickles.
