- 4 Pears
- 1 Lime
- 1.4 l Lime sorbet
- 50g Powdered sugar
- 2 vanilla pods
- 10 cl Whole milk
- Bring 1.5 liters of water to a boil with the sugar.
- Off the heat, infuse the split vanilla pods.
- Peel the pears, remove the core and seeds.
- Cut them into quarters. Immerse them in the sugar syrup and cook for 15 minutes over low heat. Drain them.
- Rinse the lime and finely grate the zest.
- Emulsify the milk with an immersion blender, adding the lemon zest.
- Arrange the pears on the plates, add the lime sorbet and coat with frothed milk.
- Serve immediately with lace crêpes.
