- 500 g yellow beans (or butter beans)
- 2 tbsp. tablespoons olive oil
- 3 tbsp. Breadcrumbs
- 40g Butter
- 3 cracker cookies
- Salt
- Pepper
- Slice the beans. Rinse and drain them, then plunge them into a pot of salted boiling water. Cook them until they remain slightly crunchy.
- Brown the breadcrumbs and crumbled crackers in a dry non-stick skillet over medium heat. Add the oil and butter, remove from the heat and let the butter melt.
- Drain the beans and add them to the pan. Mix to coat them with crispy breadcrumbs. Salt, pepper and serve.
