Pork tenderloin with mustard sauce

- 1 tenderloin of 500g
- 20 cl Light liquid cream
- 0.25 Glass of white wine
- 6 tbsp old-fashioned mustard
- 1 box of button mushrooms
- 1 knob of butter
- 1 drizzle of olive oil
- 1 onion
- In a saucepan, melt the butter and oil. Add the previously chopped onion. Fry it. Brown the filet mignon on each side. Deglaze with 1/4 glass of white wine. After 3 minutes, cover the fillet with the mustard. For water into the pan until it reaches the height of the fillet. Cover the pot and simmer for 30 minutes over low heat. Turn the meat halfway through cooking.
- Add the drained mushrooms and fresh cream. Cook 5 mins.
