Pumpkin and seitan parmentier

- 250 g SOY sliced Seitan
- 1 kg Pumpkin
- 2 Potatoes
- 1 large shallot
- 5 cl Soya Cuisine SOY
- Breadcrumbs
- 1 handful crushed hazelnuts
- 1 tbsp. 4 spice blend
- Olive oil
- Salt pepper
- Peel and dice the pumpkin and potatoes.
- Steam and reduce to a thick purée.
- Add the cooking soya and the spices. Salt, pepper, set aside.
- Brown the shallot, add the finely chopped seitan.
- In a gratin dish, alternate a layer of mashed potatoes, a layer of seitan. Finish with the mash. Sprinkle with breadcrumbs and hazelnuts. Place under the grill for 5 minutes and serve hot.
