Quick Beef Bourguignon

- 1 kg beef bourguignon (scoter, gite, twin)
- 200g Bacon
- 1 Bunch of spring onions
- 1 bunch of new carrots
- 1 bouquet garni
- 60 cl Full-bodied red wine
- 200 g button mushrooms
- 1 tbsp. Flour
- 1 tbsp. tomato concentrate
- 1 tbsp. tbsp Sunflower oil
- Salt
- Ground pepper
- Cut the meat into cubes, salt and pepper them. Heat the oil in a casserole, add the meat cubes and brown them on all sides, over medium heat.
- Meanwhile, peel the spring onions and carrots. Chop the mushrooms. Add the bacon bits to the pan, sauté for 3 minutes, then dust everything with flour and mix over the heat.
- Sprinkle with the red wine, scrape up the cooking juices well with a wooden spoon. Add the bouquet garni, onions, carrots, mushrooms and tomato purée. Mix gently, reduce the heat to minimum and cover. Let simmer for 2 hours. Adjust the seasoning before serving.
