Quick Chicken Chorizo

- 4 chicken thighs
- 2 Carrots
- 2 tomatoes
- 1 red onion
- 1 garlic clove
- 8 slices of chorizo
- 1 small can of chickpeas
- 1 tbsp. tablespoons olive oil
- Salt
- Pepper
- Peel and mince the onion and garlic. Peel the carrots and cut them into cubes. Rinse the tomatoes and cut them into quarters.
- Preheat the oven to 180°C (th.6).
- Heat the oil in a pan and sweat the onions. Add the chicken thighs and brown them on all sides.
- Add the diced carrots, tomatoes and garlic, salt and pepper, for 1 glass of water and bake for 30 minutes.
- Add the drained chickpeas and the chorizo to continue cooking for 10 minutes. Sprinkle with chopped cilantro and serve.
Tip: you can replace the cilantro with parsley.
