Rabbit with sage and lemon

- 750 g Rabbit fillet
- 3 Zucchini
- 1 Lemon
- 2 garlic cloves
- 4 sprigs of fresh sage
- 10 cl Olive oil
- 8 cl Olive oil with lemon
- Salt
- Pepper
- Prepare the marinade. Blanch the lemon zest in boiling water, 2 min. Rinse under cold water. Finely chop the lemon zest, the garlic and the leaves of 2 sage branches. Add olive oil. Add salt and pepper.
- Place the rabbit fillets in a dish and the sliced zucchini in another dish. Divide the marinade between the two dishes and leave to marinate for 2 hours.
- Thread the rabbit meat onto skewers. Grill them for 5 to 6 minutes on each side. Grill the zucchini slices.
- Fry the remaining sage leaves in olive oil until crisp. Serve the rabbit brochettes on a bed of zucchini and crispy sage.
Advice :
If you use wooden skewers, they must be soaked beforehand for 1 hour in water.
