- 2 puff pastry
- 3 eggs
- 15 cl Liquid cream
- 8 Potatoes
- 1 onion
- 200 g White ham
- 600 g Raclette cheese
- 20 g Butter
- 3 tbsp. tablespoons Flour for the pan
- Salt
- Pepper
- Cook the potatoes with their skins in a saucepan filled with cold salted water for about 20 minutes from boiling. Peel them while hot and cut them into slices 1 cm thick.
- Remove the first skin from your onion and slice it. Fry it in a pan with 10 g of butter and a little salt for 5 minutes over medium/high heat, stirring regularly.
- Butter and flour a mold.
- Place the first puff pastry at the bottom. Garnish by alternating slices of potatoes, onion, raclette cheese and slices of ham.
- Cover with the second puff pastry. Crimp the edges, scraping off the excess pastry. Make a small chimney in the center. Glaze your pie with egg yolk. Bake at 180°C (th 6) for 30 min.
- In a bowl, mix the liquid cream with 2 eggs, salt and pepper.
- For this preparation through the chimney and continue cooking for 20 minutes. Serve garnished with poppy seeds.
