
Ratatouille Quiche

- 1 puff pastry
- 2 tomatoes
- 1 Eggplant
- 1 beautiful zucchini
- 1 red pepper
- 1 large onion
- 3 garlic cloves
- 3 eggs
- 20 cl fresh cream
- 1 tbsp. Herbes de Provence coffee
- a few basil leaves
- Olive oil
- Salt
- Ground pepper
- Wash the vegetables then cut them into cubes. Peel the onion and garlic and chop everything.
- In a non-stick fry pan, heat 3 tbsp. tablespoon olive oil. Fry the onion and garlic.
- Add the vegetables and sear them over high heat for 2 to 3 minutes.
- Cover and cook over low heat for about 1 hour 30 minutes, stirring regularly.
- Preheat your oven to 180°C (th. 6). Unroll the dough in a pie pan and prick the bottom with a fork.
- Bake for 15 minutes to cook the dough blind.
- In a bowl, beat the eggs into an omelet. For in the crème fraîche and then the Provence herbs.
- Salt, pepper, and mix well.
- Place the ratatouille on the bottom of the pie then cover with the egg mixture.
- Bake for around 40 mins. Decorate with fresh basil leaves.
