Risotto with champagne and langoustines

For the risotto :
- 50 g Elle & Vire Condé-sur-Vire butter
- 1 minced garlic clove
- 1 spring onion minced
- 250 g Arborio rice
- 30 cl Dry Champagne
- 80 cl Bouillon (vegetable, chicken or other)
- 50 g grated parmesan
- 2 tbsp. Elle & Vire Heavy Whole Cream
- Salt
- Pepper
For the langoustines :
- 12 raw langoustines
- 30 g Elle & Vire Condé-sur-Vire butter
- 1 small fennel, minced
- 1 clove Garlic minced
- 2 glasses of dry Champagne*
- 1 Tomato finely diced
- 2 tbsp. Elle & Vire Heavy Whole Cream
- 1 tbsp. tablespoons olive oil
- 20 g Elle & Vire Condé-sur-Vire butter
- 1 tbsp. chopped dill
- Salt
- Pepper
Prepare the risotto :
- In a casserole dish, melt the Elle & Vire soft Condé-sur-Vire butter. Brown the garlic and onion.
- Add the rice all at once and mix. Add salt and pepper.
- As soon as the rice becomes translucent, for the champagne and stir briskly.
- Let the liquid evaporate, then add the broth little by little.
- Repeat the process until the rice is tender.
- Stop cooking. Add the parmesan and the Elle & Vire full cream. Pepper.
- Mix and keep warm.
Prepare the langoustines :
- Remove the shells, claws and heads from the langoustines.
- Reserve the langoustine bodies.
- Collect the claws and the shells, place them in a casserole dish.
- Add the Elle & Vire sweet Condé-sur-Vire butter, the fennel and the garlic clove.
- Cook over high heat for 1 min.
- Add the champagne* and the diced tomatoes. Add salt and pepper.
- Continue cooking over low heat for 15 minutes, then remove the shells and claws.
- Add the Elle & Vire full cream. Let simmer for 5 minutes.
- Mix and strain. Keep warm.
- Heat 1 tbsp. at s. of olive oil in a skillet. Cook the langoustines for 3 minutes over low heat, back side down.
- Add 20 g of Elle & Vire unsalted Condé-sur-Vire butter and the chopped dill. Add salt and pepper.
- Let cook for 1 minute over medium heat.
- Arrange the plates with the risotto, the langoustines and the fennel cream.
