
Roast veal with blood oranges and primroses

- 1 Roast veal in the walnut
- 4 blood oranges
- 1 tbsp. tablespoon soy sauce
- 1 tbsp. Honey
- 2 tbsp. tablespoons olive oil
- 0.5 tbsp. 5 berry blend
- 2 pinches Salt
- 16 Primrose flowers
- Peel the oranges raw with a serrated knife.
- Detach the quarters of pulp between the skins over a salad bowl to recover the juice.
- Fry the roast veal in a cast iron casserole dish with the olive oil, turning it over to brown it on all sides.
- Then add the quarters and orange juice, honey, soy and 1 glass of water.
- Cook covered for 40 minutes over medium heat. Add water during cooking, if necessary.
- Serve the roast cut into slices, surrounded by orange wedges, drizzled with juice and sprinkled with primrose flowers.
