Roasted apricots stuffed with brocciu and cherry coulis

- 10 beautiful apricots
- 250 g Brocciu
- 2 tbsp acacia honey
- 1 organic lemon zest
- 30 g Unsalted butter
- 1 tbsp brown sugar
- 2 cases. of praline
- 250 g Black cherries
- 0.5 glass of water
- 50 g Powdered sugar
- Fresh mint leaves (a little)
- Cut the apricots in half, remove the pits and lightly hollow out the inside with a teaspoon.
- In a skillet, melt the butter, add the brown sugar and place the apricots rounded side down on the skillet.
- Cook for 5 minutes without turning.
- Place them on a plate and let cool.
- In a salad bowl, for the brocciu, add the honey and the lemon zest chopped with a knife.
- Mix gently with a spatula and set aside in the fridge.
- Wash the cherries and remove the pits.
- In a saucepan, for the water and sugar and bring to the boil.
- Add the cherries and continue cooking over low heat for 15 minutes.
- Mix this preparation and pass it through a sieve, if it seems a little too thick, for a little water. Let cool.
- Take soup plates and place three half-apricots in the center, fill the heart of the preparation with the brocciu then sprinkle
- with praline.
- For the cherry coulis onto the plate and serve with mint leaves.
- Chill until serving.
- It was a fresh and light dessert.
