Roasted chicken with extra-good tarragon

- 1 chicken
- 1 large bunch of fresh tarragon
- Soft butter
- Olive oil
- 5-6 garlic cloves
- coarse salt
- Preheat the oven to 140°C rotating heat.
- Place a generous drizzle of olive oil in the bottom of the pan. Remove the strings around the chicken and “relax”, “open” it a little.
- Put half of the bunch of tarragon in the bottom of the casserole, scatter well. Generously salt the chicken breast, then add the other half of tarragon inside.
- Lay the chicken on its back in the casserole. Add a few pieces of butter: one in the trunk and massage the chicken all over with the rest.
- Add a little more olive oil on top. Salt the surface of the chicken, the supremes, the thighs.
- Scatter the whole garlic cloves, in a shirt, all around the chicken.
- Cook for 3 hours. After 1 hour, turn the chicken over on its stomach.
45 minutes later, turn the chicken over again, on the left thigh. 45 minutes later, turn it on the right thigh.
At the end of cooking, remove the chicken and collect the juice. Serve.
