Salmon Egg Cocktail

- 1 Cucumber
- 2 good stalks of celery
- 50 g Salmon eggs
- 1 Bunch of dill
- 0.5 tbsp. Sugar
- 1 tbsp. rice vinegar
- 0.5 tbsp. horseradish
- 25 cl whipping cream very cold
- Wash, dry and cut the cucumber in half widthwise.
- Mix one half very finely, pass through a fine sieve to recover the cucumber water. Book it cool.
- Cut the second half of the cucumber into small sticks. Wash the celery, remove the threads and cut it into thin strips.
- Put the celery and cucumber in a pan with half the chopped dill.
- Sprinkle with sugar, pour the rice vinegar and 1 tbsp. water.
- Cook gently for 5 minutes then leave to cool in the cooking juices.
- Whip the whipping cream with the horseradish with an electric whisk, set aside in the fridge.
- Divide the cucumber, celery and a few sprigs of dill into verrines.
- Add salmon eggs, cover with fresh cucumber juice, add whipped cream.
