Salmon steaks, on split pea cream

- 2 Salmon steaks
- 200 g Split peas (it will be 1 volume)
- 1 small onion
- 4 volumes of water
- 1 volume of white wine
- 8 Chorizo slices (thin)
- 6 black olives
- Olive oil
- 1 knob of butter
- Salt
- Pepper
- Peel and finely chop the white onion. Cook the dose of split peas in 4 doses of water + 1 dose of white wine, over low heat for 45 minutes to 1 hour. Drain and reserve.
- In the same pan, brown the onion slices in a little olive oil. Add the split peas - season and cook for 5 minutes, before blending.
- We will obtain a cream - if it is too thick, lengthen with a little water or cream (according to your desire).
- In a small skillet, melt the knob of butter and sear the salmon steaks - skin side down (quite quickly because the Delpierre salmon steaks are already cooked - 5 minutes). Season and set aside.
- Cut the black olives in 2. In the small salmon skillet, brown the slices of chorizo (without fat) with the olives.
- In the plates, for the cream of split peas (warmed)... lay out the salmon steaks and cover them with slices of chorizo and olives (alternating them) - like scales. Serve hot !
