
Scotch breaded soft-boiled egg

- 5 Eggs
- 10 cl White vinegar
- 60 g Flour
- 60 g Breadcrumbs
- 60 g Butter
- 150 g Celeriac
- 150 g Potato
- 10 cl Liquid cream
- 30 g Parmesan cheese
- Salt
- Pepper
- Cook the celery and the potato in salted boiling water. Pass through the vegetable mill, adding a little of the cooking liquid, to obtain a fluid purée. Add the cream, parmesan, salt and pepper.
- Bring a pot of water with vinegar to a boil. Gently drop in 4 eggs and cook for 5 minutes. Drain and plunge them into very cold water. Gently remove the shell and gently roll them in the flour, then in the beaten egg, finally in the breadcrumbs.
- In a skillet, melt the butter and brown the eggs, 2 to 3 min.
- Heat the cream of celery and divide it into soup plates. Place an egg in the center of each.
- Serve decorated with fine herbs and drops of olive oil. Accompany with dipping sauces.
