Sea bream with peppers

- 1 sea bream weighing 1.2 kg
- 1 red pepper
- 1 yellow pepper
- 3 Tomatoes
- 100 g Small black olives
For cooking and seasoning:
- 3 Lemons
- 1 onion
- 2 garlic cloves
- 2 sprigs of basil
- 3 sprigs of parsley
- 1 sprig of thyme
- 2 bay leaves
- 8 cl White wine
- 4 tbsp. tablespoons olive oil
- Salt
- Pepper
- Choose a shiny-looking sea bream and ask your fishmonger to scale and gut it first.
- Rinse it off. Dry it with absorbent paper.
- Place it in a hollow dish. Sprinkle the sea bream with lemon juice. Salt and pepper it.
- Let it marinate for 20 minutes, turning it twice.
- Peel the onion and garlic and cut them into thin slices. Cut the peppers into pieces after removing the stem and seeds.
- Quickly boil the tomatoes. Peel them and divide them in half. Chop the basil and the parsley.
- Heat in a skillet 2 tbsp. tablespoons olive oil and fry the onion, garlic and pepper pieces. Let cook for 5 minutes.
- When the sea bream has marinated for the necessary time, drain it and pat it dry.
- Preheat the oven on thermostat 7 (210°C).
- Put the garlic, onion and pepper pieces in a baking dish.
- Arrange the sea bream on the bed of vegetables. Surround it with half tomatoes. Sprinkle with olives.
- Drizzle with white wine and remaining oil. Add salt and pepper.
- Sprinkle the sea bream with the crumbled thyme, chopped parsley and basil. Add the bay leaf.
- Slide the dish into the oven. Bake for 25 minutes, basting two or three times with cooking juices.
- Serve immediately.
