
Simple and quick mustard rabbit

- 1 whole rabbit in pieces
- 150 g Dijon mustard
- 150 g button mushrooms
- 3 shallot
- 2 tbsp. tablespoons olive oil
- 2 tbsp. balsamic vinegar
- 2 tbsp. tablespoons fresh cream
- 2 sprigs of rosemary
- Salt
- Pepper
- Peel and chop the shallots. In a saucepan, heat the olive oil then add the rabbit pieces.
- Salt, pepper and fry over high heat.
- After colouring, lower the heat to medium and add the shallots and mustard.
- Sweat for 2 minutes and deglaze with the balsamic vinegar and 1/2 glass of water.
- Add the mushrooms and 1 sprig of rosemary. Cover and simmer for 30 mins.
- Pour in the cream to bind the sauce, then cook for a few more minutes.
- Remove the rosemary and serve immediately decorated with a few crumbled rosemary leaves.
Tip: For even more flavor, you can add 1 red onion and replace the Dijon mustard with old-fashioned mustard.
