Spaghetti with Pork Meatballs and Fennel

- 400 g Ground pork
- 400 g Spaghetti
- 2 Onions
- 2 garlic cloves
- 70 g Fennel
- 1 egg yolk
- 1 tbsp. coffee Fennel seeds
- 1 tbsp. tablespoons Tomato concentrate
- 10 cl Red wine
- 1 can of peeled tomatoes
- 10 cl Beef broth
- 150 g Shelled beans, peeled (and frozen)
- 2 sprigs of basil
- 3 tbsp. breadcrumbs
- 20 g Parmesan cheese
- 6 tbsp. tablespoons olive oil
- Salt
- Pepper
- Wash the piece of fennel then chop it.
- Pass your garlic cloves through a garlic press to extract the pulp.
- Remove the first skin from your onions then chop them.
- Crush the fennel seeds in a mortar.
- In a skillet, brown half the garlic and your chopped onions as well as the fennel in 2 tablespoons of olive oil with a little salt over medium/high heat for 5 minutes, taking care to mix regularly.
- For the contents of your pan into a bowl. Add the minced pork, egg yolk, breadcrumbs, fennel seeds, salt and pepper. Form balls between the palms of your hands.
- In a skillet, brown your meatballs in 2 tablespoons of oil over very high heat for 3 minutes. Reserve them.
- In a fry pan, fry the remaining garlic and onion in 2 tablespoons of olive oil with a little salt over medium/high heat for 3 minutes.
- Add the tomato puree and continue cooking for 2 minutes, stirring.
- Add the peeled tomatoes, broth and wine. Mash the tomatoes with a fork. Simmer for 10 minutes over medium heat.
- Add the meatballs to your sauce and continue cooking for another 10 minutes.
- Immerse your beans in a saucepan filled with salted boiling water and cook them for 5 minutes. Refresh them immediately in water with ice cubes. Drain them.
- Cook the spaghetti in a large saucepan filled with plenty of boiling salted water for the time given on the packet. Drain them.
- Serve your pasta with meatballs, tomato sauce and beans.
- Garnish with grated parmesan and a few basil leaves.
