- 1 tablespoon extra virgin olive oil
- 1 brown onion, finely chopped
- 2 garlic cloves, crushed
- 120 g baby spinach, coarsely chopped
- 3/4 cup macaroni
- 180g block halloumi, grated
- 150 g fetta, crumbled
- 1 small zucchini, grated
- 1/4 cup finely chopped fresh dill
- 1/4 cup finely chopped fresh mint leaves,
- 1 tablespoon finely grated lemon zest
- 1/3 cup self-rising flour
- 5 eggs, lightly beaten
- Dill, for serving
- Lemon zest, to serve
- Preheat the oven to 180C/160C convection heat. Grease a loaf pan 7 cm deep and 9.5 cm x 19.5 cm. Line the bottom and sides with parchment paper, extending the paper 2cm above the pan on all sides.
- Heat the oil in a large frying pan over medium-high heat. Add the onion. Cook, stirring, for 5 minutes or until softened. Add the garlic. Cook for 1 minute or until fragrant. Add spinach. Cook for 1 minute or until softened. Remove skillet from heat. Let cool.
- Meanwhile, cook the pasta in a pot of boiling water according to package directions. Drain. Refresh under cold water. Drain well. Place in a large bowl.
- Add halloumi, fetta, zucchini, dill, mint, lemon zest and flour to pasta. Add the egg. Season with pepper. Stir to combine. For into prepared pan. Bake for 55 minutes to 1 hour or until golden and firm. Let rest in pan for 10 minutes. Transfer to a wire rack to cool. Slice. Serve with lemon zest and additional dill and mint leaves.
