- 1 gutted hen
- 200 g Ground veal
- 2 slices smoked ham
- 3 Onions
- 1 shallot
- 1 garlic clove
- 5 Carrots
- 4 Leeks
- 4 turnips
- 1 bouquet garni
- 1 egg
- 1 clove
- 1 tbsp. tablespoons olive oil
- Salt
- Pepper
- Peel and chop 2 onions, shallot and garlic.
- Fry this minced meat in olive oil in a frying pan. Chop the smoked ham.
- In a salad bowl, combine the minced meat with the ham, the contents of the pan, the egg, salt and pepper.
- Mix with a fork to obtain a homogeneous filling.
- Fill the cavity of the hen with this stuffing, close with wooden skewers.
- Peel the remaining onion, prick it with the clove.
- Take the green of the leek, rinse it. Peel and rinse 1 carrot and the greens of the leeks.
- Pour water into a Dutch oven to cover the poultry and vegetables, salt and pepper.
- Bring to the heat, when the liquid boils, lower the heat and simmer for 3 hours.
- Peel the turnips and the remaining carrots, cut them into large pieces, split the leek whites in half.
- Add all these vegetables to the broth 30 minutes before the end of cooking.
- Cut up the poultry, present it surrounded by stuffing and vegetables.
- Offer the broth on the side and serve hot.
