- 1 Hen (about 2 kg)
- 220 g cooked ham
- 120 g Crumbs of stale bread
- 6 Carrots
- 6 turnips
- 4 Leeks
- 1 stalk of celery
- 1 egg
- 1 onion
- 2 garlic cloves
- 6 sprigs of parsley
- 1 bouquet garni
- 4 Cloves
- Salt
- Pepper
- Mix the stale bread and the ham separately. Cut the chicken liver into cubes. Chop the peeled and degermed garlic cloves.
- In a bowl, mix the ham and the breadcrumbs, add the chicken liver cubes. Season with salt and pepper, add the chopped parsley and chopped garlic, then for in the beaten egg and mix the stuffing well.
- Salt and pepper the inside of the hen, then fill with stuffing. Tie up the hen.
- In a large pot, bring water to a boil. Pierce the onion with 4 cloves. Generously salt and pepper the water and add the chopped onion and the bouquet garni. Place the stuffed hen in this broth, simmer covered for 2 hours.
- Clean the leeks, cut them into sections. Peel the carrots and turnips and cut them into large slices. Cut the celery stalk into pieces. Put the vegetables in the broth and continue cooking for 45 minutes. Serve the stuffed chicken hot.
