
Swedish Hasselback Potatoes

- 4 organic potatoes
- Olive oil from the south of France, subtle taste
- Herbs of Provence
- Fleur de sel with Espelette pepper, Provence tradition
- Preheat your oven to 180°C.
- Wash the potatoes to remove the dirt.
- To cut them without separating the strips completely, wedge the potatoes on a cutting board between two Chinese chopsticks, so
- you won't be able to slice them all the way through.
- Cut them into thin slices of 2 to 3 mm using a knife.
- Place the potatoes in a casserole dish.
- Brush the potatoes with olive oil.
- Sprinkle them with Herbes de Provence and fleur de sel with Espelette pepper.
- Pour them over the potatoes.
- Bake them for 45 minutes to 60 minutes, depending on your oven.
- The potatoes should be tender.
