Tomato basil mussels

- 2 kg Mussels
- 20 Basil leaves
- 0.5 white onion
- 4 white spring onions
- 1 small zucchini
- 2 large field tomatoes
- 10 cl dry white wine
- In a saucepan, fry the white onion for a few minutes in two tablespoons of olive oil.
- Deglaze with white wine and boil.
- Add the diced zucchini and the chopped spring onions.
- Cook for 2 minutes.
- Add the mussels and put on high heat and cover.
- After two minutes, add the coarsely chopped (or torn by hand) tomatoes and basil and a drizzle of olive oil.
- Stir the mussels well to even out the cooking.
- Cook another 5 minutes, still covered.
- When the mussels are fully open, remove from the heat.
- Alcohol abuse is dangerous for health.
