
Turnip stew

- 6 large turnips
- 1 onion
- 1 clove of garlic
- 2 bay leaves
- 1 C. tablespoons dried thyme
- 1 C. tablespoon tomato purée
- 1 C. olive oil
- 75 cl of water
- pepper
- Peel the turnips using a paring knife then cut them into pieces.
- Peel the onion and the clove of garlic then slice the onion and chop the garlic.
- In a casserole dish, with olive oil, brown the onion and garlic.
- Then add the turnips and let brown, stirring occasionally with a spatula.
- Once the vegetables are golden, add the water, thyme and bay leaf.
- Season with pepper then cover and cook for 30 minutes over medium heat.
- The turnip stew must boil.
- Then add the tomato puree, mix and cook for just 2 minutes.
- Once cooked, immediately serve this dish to your guests in soup plates and enjoy.
