- 500 g white beans
- 4 eggs
- 6 slices country bread
- 1 onion
- 2 garlic cloves
- 2 Cloves
- 1 Bunch of chives
- 4 tbsp. tablespoons olive oil
- 3 tbsp white vinegar
- Salt
- Pepper
- Put the white beans in a terrine. Cover them with cold water. Leave to soak for 6 hours.
- Drain the white beans.
- Put them in a pot with the onion studded with cloves, 2 crushed garlic cloves and 2 tbsp. tablespoon olive oil.
- Water with 2.5 liters of cold water. Boil the water. Cover. Cook for 2 hours over low heat. Salt and pepper at the end of cooking.
- Rub the slices of bread with garlic. Grill them. Finely chop the chives.
- Before serving, put water to boil in a saucepan with the vinegar.
- Crack each egg into a coffee cup. When the water is boiling, bring a cup to the surface of the water and turn it upside down.
- Using a slotted spoon, bring the filaments from white to yellow.
- After 3 min, drain the eggs with a slotted spoon. Add salt and pepper.
- At the last moment, remove the onion from the beans. Add the rest of the oil.
- Serve very hot on plates, topped with poached eggs, with slices of bread.
