Zucchini and burrata spaghetti

- 3 zucchini
- 200 g burrata
- 1 small white onion
- 3 tbsp. olive oil
- 2 tbsp. lemon juice
- 1 C. tablespoons white balsamic vinegar
- 1 C. tablespoon chopped fresh mint leaves
- Salt
- Pepper
- Start by washing your zucchini thoroughly in clear water. Then dry them in a clean towel or in absorbent paper.
- Take a spaghetti vegetable cutter and cut the zucchini into strips.
- If you don't have the right tool, you can just as easily use a paring knife and cut tagliatelle.
- Then sprinkle the zucchini spaghetti with lemon juice and salt them so that they soften.
- Prepare the burrata to accompany your spaghetti. Wash the white onion, dry it in a clean tea towel then chop it finely.
- In a bowl, mix the balsamic vinegar, olive oil, chopped mint and sliced white onion. Add salt and pepper.
- Cut the burrata into coarse pieces before adding it to the bowl.
- Crush and then stir everything with a fork so that the herbs are well incorporated into the burrata.
- Arrange the plates by placing the zucchini spaghetti, top them with a large tablespoon of seasoned burrata.
- You can decorate your plate with a few leaves of aromatic herbs such as basil, roasted pine nuts or even a few pomegranate seeds.
