
Zucchini and pepper cake

- 300 g Zucchini
- 1 red pepper
- 1 onion
- 1 garlic clove
- 170 g Flour
- 70 g grated Gruyere cheese
- 3 eggs
- 7 cl Milk
- 1 tbsp. Honey
- Salt
- Pepper
- Wash the courgettes and cut them into pieces. Wash the bell pepper and cut it into pieces, taking care to remove the seeds.
- Peel the onion and chop it. Peel the garlic and crush it.
- In a skillet, heat 2 tbsp. tablespoon olive oil. Sauté the onion and garlic then add the vegetables. Cook for 10 minutes then let the vegetables drain for about 1 hour.
- Preheat your oven to 200°C (th. 6-7). In a bowl, mix the flour, eggs, honey, milk, grated cheese and 3 tbsp. oil soup. Salt, pepper and mix until you obtain a homogeneous paste.
- Add the vegetables to the previous preparation. Mix again and pour into a cake tin covered with a sheet of parchment paper.
- Bake for 35 mins.
Tip: To check that your cake is cooked, insert the blade of a knife into it. It should come out dry. Accompany this cake with a homemade pesto and serve it as an aperitif or as a starter with a salad.
