
Zucchini quiche without dough

- 3 Zucchini
- 1 onion
- 1 garlic clove
- 3 eggs
- 80 g Rice
- 40 g Parmesan cheese
- 10 cl fresh cream
- 1 tbsp. Herbes de Provence
- 2 pinches Turmeric
- Olive oil
- Salt
- Ground pepper
- Boil a large volume of salted water then cook the rice in it as indicated on the packet. Drain and reserve.
- Wash the zucchini. Peel the onion and the garlic. Cut the zucchini into small pieces and finely chop the onion and garlic.
- In a non-stick pan, heat 2 tbsp. tablespoon olive oil.
- Add the onions and garlic and fry for 5 minutes.
- Add the courgettes to the pan with the Herbes de Provence and the turmeric. Let cook over medium heat for 15 minutes.
- Take off heat and let cool.
- Preheat your oven to 200°C (th. 6-7). In a bowl, beat the eggs into an omelet.
- For in the cream and parmesan. Salt, pepper, and mix well. Add the cooled zucchini mixture and the rice. Mix again.
- Oil a pie pan and for the previous preparation into it. Bake for around 35 mins.
Tip: Serve hot or lukewarm with a green salad with vinegar.
