Mexican fajitas with azuki beans, lettuce, tomatoes, red cabbage and lemon

Preparation: 10 minutes Cooking : - minutes For 4 persons

Ingredient :

- 4 Wheat (or corn) tortillas - 1 Can azukis beans - 1 avocado - 40 g Lettuce - 0.25 Red cabbage - 1 Lime - 2 Tomatoes - 3 drops Tabasco - 1 Dash olive oil - 2 Parsley sprigs

Step 1 :

Peel and slice the avocado.  Thinly slice the cabbage and lettuce.

Step 2 :

Wash and dice the tomatoes, then chop the parsley.

Step 3 :

Place the vegetables in a bowl, add the drained beans and pour in the oil and Tabasco.

Step 4 : 

Season with salt and pepper and mix well.

Step 5 : 

Pour in the lime juice and spread the mixture over the warmed patties.
