Zucchini omelette cubes

Preparation: 15 minutes Cooking : 20 minutes For 4 persons

Ingredient :

- 8 Eggs - 3 Small zucchinis - 4 spring onions - 3 tbsp. Olive oil - 0.5 Bunch parsley - 0.5 Bunch mint - Salt - Pepper

Step 1 :

Grate the zucchini (unpeeled) using the coarse-hole grater.

Step 2 :

Fry for 6 or 7 minutes with 2 tbsp. olive oil and the chopped onions.

Step 3 :

Season with salt, pepper and finely chopped parsley and mint.

Step 4 :

Beat the eggs into an omelette in a bowl.  Season with salt and pepper.  Add the lightly warmed zucchini.

Step 5 :

Pour into an oiled rectangular mold.  Bake for 12 min in a hot bain-marie in a preheated oven at th. 7 (210°C).

Step 6 :

Turn out while still warm.  Cut the omelette into 2.5 cm strips, then into cubes.  Serve warm or cold.
