Zucchini omelette cubes
Grate the zucchini (unpeeled) using the coarse-hole grater.
Fry for 6 or 7 minutes with 2 tbsp. olive oil and the chopped onions.
Season with salt, pepper and finely chopped parsley and mint.
Beat the eggs into an omelette in a bowl. Season with salt and pepper. Add the lightly warmed zucchini.
Pour into an oiled rectangular mold. Bake for 12 min in a hot bain-marie in a preheated oven at th. 7 (210°C).
Turn out while still warm. Cut the omelette into 2.5 cm strips, then into cubes. Serve warm or cold.
