Ingredients
  

  • For the melon sorbet:
  • 1 Ripe melon
  • 2.1 oz Sugar
  • 1 tbsp Honey
  • For the watermelon granita:
  • 17.6 oz Watermelon
  • 0.5 Lemon
  • 10 Mint leaves
  • 2 tsp Sugar

Instructions
 

  • The day before, peel and seed the watermelon, and cut it into cubes. Place them in a freezer bag and freeze for at least 6 hours.

  • On the day of serving, peel, seed, and cube the melon. In a saucepan, heat 3.4 fl oz of water, sugar, and honey over low heat. Once the sugar dissolves, poach the melon for 10 minutes.

  • Blend the melon and syrup, let it cool, and place the mixture in an ice cream maker. Let it churn as per the machine’s instructions.

  • Place the frozen watermelon cubes in a blender. Add the lemon juice, sugar, and mint leaves. Wait for 5 minutes, then blend.
