The day before, peel and seed the watermelon, and cut it into cubes. Place them in a freezer bag and freeze for at least 6 hours.
On the day of serving, peel, seed, and cube the melon. In a saucepan, heat 3.4 fl oz of water, sugar, and honey over low heat. Once the sugar dissolves, poach the melon for 10 minutes.
Blend the melon and syrup, let it cool, and place the mixture in an ice cream maker. Let it churn as per the machine’s instructions.
