Spinach, Gorgonzola, and Raisin Lasagna is a unique and flavorful twist on traditional lasagna. Trim and wash the spinach. Chop it roughly and drain it without wringing too much. Sweat the spinach with the chopped garlic in a large pot over high heat, stirring often, then transfer to a sieve to drain well.
Heat the Gorgonzola in pieces with the cream in a saucepan, season with salt and pepper, and add the nutmeg. Thinly slice the sage leaves.
Preheat the oven to 350°F (180°C). Mix the spinach with two-thirds of the Gorgonzola sauce.
Spread a layer of lasagna sheets in the bottom of a baking dish for 6 servings. Top with half of the spinach mixture and sprinkle with half of the raisins. Cover with a second layer of lasagna sheets and add the remaining spinach and raisins. Finish with a final layer of lasagna sheets and pour the remaining sauce over the top.
Sprinkle with Pecorino and scatter the sliced sage on top. Bake for 40 to 45 minutes, or until the lasagna is well-cooked and golden on top.
