Ingredients
  

  • 2.2 lbs Spinach
  • 3 Cloves Garlic
  • 8 Sage Leaves
  • 2.5 cups Heavy Cream
  • 10.5 oz Gorgonzola
  • 2.1 oz Pecorino grated
  • 7 oz Dry Lasagna Sheets
  • 2.8 oz Raisins
  • 1 teaspoon Grated Nutmeg
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Trim and wash the spinach. Chop it roughly and drain it without wringing too much. Sweat the spinach with the chopped garlic in a large pot over high heat, stirring often, then transfer to a sieve to drain well.

  • Heat the Gorgonzola in pieces with the cream in a saucepan, season with salt and pepper, and add the nutmeg. Thinly slice the sage leaves.

  • Preheat the oven to 350°F (180°C). Mix the spinach with two-thirds of the Gorgonzola sauce.

  • Spread a layer of lasagna sheets in the bottom of a baking dish for 6 servings. Top with half of the spinach mixture and sprinkle with half of the raisins. Cover with a second layer of lasagna sheets and add the remaining spinach and raisins. Finish with a final layer of lasagna sheets and pour the remaining sauce over the top.

  • Sprinkle with Pecorino and scatter the sliced sage on top. Bake for 40 to 45 minutes, or until the lasagna is well-cooked and golden on top.
