Boil the potatoes in a pot of salted water for 20 minutes until tender. Drain, peel, and cut them into thick slices.
Cut the bacon into lardons and grill them in a dry skillet. Deglaze with the white wine and reduce. Add the cream, a pinch of salt, and the thyme leaves. Reduce for 5 minutes.
Remove the rind from the Reblochon and cut it into slices. Arrange half of the slices at the bottom of a baking dish.
Preheat the oven to 200°C (th.6-7). Place the potato slices in the dish and pour the bacon sauce over them.
Cover with the remaining Reblochon slices, season with pepper, and bake for 15 minutes until everything is melted and nicely browned on top.
