Chicken with apples and cider cream

- 1 beautiful free-range chicken of 1.5 kg
- 1 kg Apples
- 20 cl Cider
- 20 cl Light whipping cream
- cinnamon
- 1 tbsp goose fat (or olive oil)
- Salt
- Put the chicken in the oven at 220°C after having seasoned it: salt, pepper, cayenne pepper and grease with 1 tbsp. at s. of goose fat. Cook for 1h20.
- Peel the apples and cut them into pieces.
- Cook them in a pan with goose fat. Stir regularly salt, pepper and sprinkle generously with cinnamon. To book.
- Preparation of the cider cream: bring the cider to the boil in a saucepan and reduce it by ¾. Add a chicken stock cube and melt it well, then add the whipping cream. Bring to a boil and turn off the heat. Adjust the seasoning if necessary.
- In the last quarter of an hour of cooking the chicken, put the apples around.
- Carve the chicken and serve, drizzled with the warmed cider cream and the cinnamon apples on the side.
