Chicken strips with curry

- 400g Chicken strips
- 2 courgettes
- 1 shallot
- 2 tbsp. coffee Curry
- 2 tbsp. tablespoons Oil
- 1 small bunch of fresh coriander
- Salt
- Pepper
- Rinse the courgettes and cut them into slices. Heat 1 tablespoon of oil in a sauté pan and sweat the peeled and minced shallot.
- Add the zucchini and cook for about 15 minutes, stirring often. Remove them from the pan and set aside.
- Heat the remaining oil in the sauté pan and brown the chicken strips on all sides. Season with salt and pepper, sprinkle with curry and continue cooking over low heat for 5 minutes.
- Add the zucchini, continue cooking for a few more minutes, sprinkle with coriander and serve hot.
Suggestion: serve with rice. Depending on your taste, choose a more or less spicy curry.
