Brick in the oven, spinach feta

- 1 packet Brick pastry sheets
- 1 chicken breast
- 2 handfuls of fresh spinach
- 100g Feta
- Salt
- Pepper
- 1 egg
- Chop the chicken into small dice. Wash and hull the spinach, roughly chop, crumble the feta.
- Fry the chicken cubes over high heat for 5 minutes. Add the spinach then the feta, and let melt for 5 minutes covered. Off the heat, salt and pepper the mixture.
- Cut a pastry sheet in 2. Place a tbsp. of preparation near the flat side of the semi-circle. Roll the sheet once to envelop the stuffing. Fold the ends inward, then continue rolling the half sheet. You get a roll. Place the fold underneath.
- Repeat the operation with all the pastry sheets.
- Brush the brick rolls with the beaten egg. Place them on an oven rack, seam side down. Bake for 20 mins.
- After 10 minutes of cooking, turn the bricks over and continue cooking normally.
