Haddock fish cake

- 500 g haddock fillets
- 600 g Potatoes
- 10 cl Milk
- 75 g Butter (+ for the ramekins)
- 3 tbsp. tablespoons single cream
- 6 sprigs of parsley
- 0.5 Lemon
- Salt
- Pepper
- Peel and cut the potatoes into pieces. Steam for 15 minutes. Add the haddock to the top basket. Continue cooking for 5 minutes.
- Mash the potatoes, incorporating the hot milk and 25 g of butter. Salt, pepper.
- Bring the cream to the boil over low heat and add 50 g of butter. Add the chopped parsley and a squeeze of lemon juice.
- Strip the haddock and divide it into 4 buttered ramekins, cover with cream and then mashed potatoes.
- Brown for 5 minutes under the broiler and serve hot.
