Pork curry with zucchini and grapes

- 400g Sautéed pork
- 2 courgettes
- 1 Eggplant
- 50 g Raisins
- 2 tbsp. coffee Curry
- 1 Lime
- 1 onion
- 2 tbsp. tablespoons Oil
- Salt
- Peel and chop the onion. Rinse the eggplant and zucchini and cut them into cubes. Cut the meat into small cubes. Rinse the lime and grate its zest.
- Heat the oil in a pan and sweat the onion. Add the meat cubes and brown them on all sides. Add the diced zucchini and aubergine, the lemon zest and the curry, salt and pepper, and for about 15 cl of water.
- Cover and simmer for 15 mins. Add the raisins and continue cooking for about 15 minutes. Serve hot.
Tip: serve with naan and basmati rice.
