Spaghetti carbonara with celery

- 200g Spaghetti
- 50 g Bacon sticks
- 100 g Ham sticks
- 350 g Celeriac
- 15 cl Light liquid cream
- 5 cl Whole liquid cream
- 4 tbsp. tablespoon grated parmesan
- 4 egg yolks (optional)
- Salt
- Ground pepper
- Cut the celery into long thin sticks. Immerse them for 30 sec. in a pot of boiling water to soften them. Drain them.
- Cook the spaghetti in boiling salted water.
- Heat a non-stick sauté pan and brown the bacon then the celery, ham, cream, half the parmesan, salt and pepper.
- Let cook for 5 minutes. 4 Drain the spaghetti and mix them delicately with the julienne of celery.
- Sprinkle with the remaining parmesan when serving and add an egg yolk.
