Tomato Pie and Oatmeal Mustard

- 3 to 4 very ripe tomatoes
- 1 heaped tbsp old-fashioned mustard
- 0.5 Bunch of fresh basil
To make the homemade dough:
- 100 g brown wheat flour
- 30 g Bjorg rolled oats
- 50 ml Bjorg olive oil
- 0.5 tsp herb salt
- Mix all the dry ingredients together in a deep container. Sand with olive oil and add enough water to form a ball of soft dough.
- Film and leave to rest for 30 minutes or more at room temperature.
- Cut the tomatoes into slices, salt them and let them release their water through a sieve.
- Preheat the oven to 200°, fan-assisted function only on floor.
- Roll out the dough with a rolling pin and line a tart pan. Spread the mustard on the bottom of the pie and arrange the tomato slices, overlapping them slightly.
- Bake the mold placed at the bottom of the oven on a rack for 30 minutes so that the dough is well cooked.
- Let the pie cool down and sprinkle with basil leaves. Enjoy warm or cold.
- The Tip: The nutrient-dense ingredients in the dough provide flavor and goodness. After cooking, the mustard loses its strength and goes wonderfully well with the tomato: an ideal recipe to adopt without moderation in summer!
